Ingredients:
Fresh corn on the cob, boiled
Cherry tomatoes
Yellow peppers
Orange peppers
Fresh basil
Fresh chives, finely sliced
Crumbled feta cheese
Salad:
Cut the corn off the cob, chop all ingredients and mix together. Top with chives and crumbled feta cheese.
Chili-Lime Dressing:
Mix together:
1 part fresh squeezed lime juice
1/2 part honey
A drizzle of olive oil
A dash of garlic powder
A few shakes of crushed red pepper flakes
Add extra ingredients to taste.
Toss the salad and dressing together. It makes the perfect fresh, summer salad with a bit of kick. Enjoy!
