Corn Salad with Chili-Lime Dressing (from home)


Ingredients:

Fresh corn on the cob, boiled
Cherry tomatoes
Yellow peppers
Orange peppers
Fresh basil
Fresh chives, finely sliced
Crumbled feta cheese

Salad:

Cut the corn off the cob, chop all ingredients and mix together. Top with chives and crumbled feta cheese.

Chili-Lime Dressing:

Mix together:
1 part fresh squeezed lime juice
1/2 part honey
A drizzle of olive oil
A dash of garlic powder
A few shakes of crushed red pepper flakes

Add extra ingredients to taste.

Toss the salad and dressing together.  It makes the perfect fresh, summer salad with a bit of kick.  Enjoy!

  10. Okay, this corn salad sounds absolutely delicious and perfect for a summer BBQ! I love the chili-lime dressing – that little bit of heat with the sweetness of the honey sounds amazing. I'm definitely going to try this at our next get-together. It reminds me of some of the crazy things my family did for our own BBQs back in the day. Back when we were kids we would play our own little version of doodle baseball while the adults grilled. Only we didn't have the 3d yet! Good times and good food always made a lasting memory.     Nothing screams summer more than bright veggies and a zesty chili-lime dressing. One time, I tried making a similar recipe but totally underestimated the strength of crushed pepper flakes—talk about a Level Devil kick that set my taste buds on fire. Lesson learned: always taste as you go with spicy dressings.
